It’s a comforting dish that can warm you up if you’re chilly and help make you feel better if you’ve been under the weather. This homemade soup is easy to make and it tastes much better than the canned version.
This recipe contains a few ingredients like tomatoes and potatoes that you won’t find in a classic chicken noodle soup, but they are great additions that make the soup even heartier.

How to Make Chicken Noodle Soup:
1) Wash and prep all vegetables. Then, add the red onion, minced garlic, celery, carrots, potato, tomatoes, chicken bouillon, and chicken breasts to a large stock pot.
2) Sprinkle Adobo seasoning, garlic powder, Italian seasoning and pepper over the chicken and veggies, then add water.
3) Bring pot to a boil over high heat, then cover with lid and reduce heat to medium low. Cook for 10-20 minutes, just until veggies have softened and chicken is cooked through. Try not to overcook your chicken so that it doesn’t turn out tough.
4) Transfer the cooked chicken from the pot to a plate and set aside. Break your dry spaghetti noodles into three parts so the noodles won’t be too long. Add broken spaghetti noodles to the pot and cook (covered) for another 10-15 minutes, stirring occasionally, until pasta has cooked to desired tenderness.
5) While the noodles are cooking, use two forks to shred the cooked chicken. Return chicken to the pot once spaghetti is done cooking. Stir everything together and serve the soup warm. You can top individual servings with a sprinkle of dried parsley flakes for a little extra color (optional).

Ingredients
- 1/2 large red onion (diced)
- 1 teaspoon minced garlic
- 3 stalks of celery (sliced)
- 3 large carrots (peeled, sliced)
- 1 large potato (peeled, diced)
- 2 medium/large tomatoes (cut into large chunks)
- 2 chicken bouillon cubes (the small 1/2 inch size cubes)
- 2 large chicken breasts (fresh or frozen)
- 1 Tablespoon Goya Adobo all-purpose seasoning
- 1 Tablespoon garlic powder
- 1/2 teaspoon Italian seasoning
- black pepper, to taste
- 8 cups water
- 8 oz. spaghetti noodles (broken in thirds)
- dried parsley flakes (optional)
Instructions
- To a large pot, add red onion, minced garlic, celery, carrots, potato, tomatoes, chicken bouillon, and chicken breasts.
- Add Adobo seasoning, garlic powder, Italian seasoning & pepper, then add water.
- Bring pot to a boil on high heat, then cover and reduce heat to medium low. Cook 10-20 minutes, just until veggies have softened and chicken is cooked through.
