We had a great time celebrating Christmas over the weekend!
A few years ago, our family started doing a Christmas brunch instead of the traditional dinner. Our kids really love it because they are happy to eat breakfast food any time of day. It’s a win for the adults too since breakfast foods are usually quicker and easier make.
Because of our schedule this year, we decided to go back to doing Christmas dinner. It turned out really nice. We had a great time hanging out with our family and there was plenty of good food and desserts.
When I asked our kids what they wanted to put on the menu, they requested a birthday cake for Jesus😊 I love that they are understanding the reason why we celebrate Christmas. My brother brought a delicious birthday cake so we could make it happen!
Since we didn’t have our Christmas brunch, I’m planning to make a big breakfast for New Years. It will just be our immediate family this time, but it will be a good chance for us to reflect on all the good things and blessings we had the opportunity to experience in 2022.
And what better food to have for breakfast than pancakes!
Lately I have been making these easy, delicious homemade pancakes that come together quickly using simple ingredients. You don’t even need buttermilk to make them.
These pancakes are like old-fashioned style pancakes, so they are a little thicker than other pancakes. They taste great hot off the griddle with butter and lots of syrup😋

Ingredients in Easy Homemade Pancakes:
All-Purpose Flour
Granulated Sugar
Baking Powder
Baking Soda
Salt
Milk
Water
Butter
Vanilla Extract

How to Make Easy Homemade Pancakes:
1) Preheat griddle to 350 degrees F. Place your butter in a small bowl and heat it up in the microwave just until it’s melted. Set the butter aside to cool while you prepare the other ingredients.
2) In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
3) In a separate medium bowl, whisk together the wet ingredients (egg, milk, water, and vanilla extract) until fully combined.
4) Create a well in the middle of the dry ingredients by pushing the flour mixture up against the walls of the bowl. Pour the wet ingredients and the cooled melted butter into the well. Use a spoon to gently mix wet and dry ingredients together. Just stir it until the wet and dry ingredients are incorporated and no dry patches of flour remain. Make sure any big lumps are gone, but there should still be small lumps in the batter. Try not to overmix it so that your pancakes don’t turn out tough. Allow the batter to sit undisturbed for 5 minutes before adding to the griddle. This helps make the pancakes fluffier.
5) Add a little vegetable oil or a little extra butter to the preheated griddle and use a paper towel to spread it evenly across the surface (this helps the pancakes to brown evenly). Add about 1/2 cup of batter for each pancake, using the measuring cup to help spread the batter into a circle. Cook 1-2 minutes, until bubbles have started to form and pop on the surface. Flip the pancakes and cook another 1 minute. Both sides should be golden brown.
6) Remove pancakes from griddle and repeat step 5 with the remaining batter. This recipe makes 8-10 large pancakes. Serve them warm with butter and syrup.
