Easy Oven Roasted Carrots
This is a simple method to make easy oven roasted carrots for a side dish or healthy snack
Yield: 4 servings
Ingredients
- 2 lbs. baby carrots, washed and dried
- 1/4 cup olive oil
- ground pink Himalayan salt
- ground black pepper
Instructions
- Preheat oven to 400F.
- Line a large baking sheet with aluminum foil. Place washed/dried carrots on baking sheet, drizzle with olive oil, and season with salt and pepper to taste. Stir well to coat all carrots in olive oil and seasoning, then spread them out into a single layer.
- Bake on middle rack of preheated oven for 1 hour. Stir carrots every 20 minutes during baking time, making sure to spread them back into a single layer after stirring. (Keep an eye on the carrots; if your oven runs hotter than mine, the carrots will need to be stirred more frequently to prevent burning.)
- After 1 hour, continue baking for another 15-30 minutes. Stir carrots more frequently, about every 5-10 minutes. Remove from oven as soon as they reach desired level of caramelization.
- NOTE: The carrots will be cooked before the 1 hour mark. If you prefer firmer roasted carrots, you can remove them from the oven before 1 hour. For softer, more caramelized carrots, follow the cooking time in the directions.
