Blueberries are one of those things that I appreciate more as I’ve gotten older.
I did not like blueberries or blueberry flavored foods when I was a kid. I had a bad experience with a blueberry muffin in elementary school and it took me a long time to get over it lol. But I’m glad to report that things have finally changed, and as an adult I can eat blueberries without feeling grossed out. I thank God for progress!😊

Ingredients in Homemade Blueberry Pancakes:
Fresh Blueberries
All-Purpose Flour
Granulated Sugar
Baking Powder
Baking Soda
Salt
White Vinegar
Milk
Water
Egg
Vanilla Extract
Butter
How to Make Homemade Blueberry Pancakes:
1. Preheat griddle to 350F.
2. Add white vinegar to a liquid measuring cup, then fill the rest of the measuring cup with milk until it reaches the 1.5 cup marker. Stir together, then let the mixture sit for 5-10 minutes to thicken. This is your “homemade buttermilk”.
3. In a large bowl, whisk together the dry ingredients: flour, granulated sugar, baking powder, baking soda, and salt.
4. To dry ingredients, add the wet ingredients: homemade buttermilk, water, egg, vanilla extract, and melted butter.
5. Gently whisk the wet and dry ingredients together, just until incorporated and no dry patches of flour remain. There will still be small lumps in the batter. Try not to overmix so that your pancakes don’t turn out tough. Allow batter to rest in the bowl undisturbed for 5 minutes before cooking.
6. Melt a little butter on the preheated griddle and use a spatula to spread it evenly across the surface. Add 1/2 cup of batter to the griddle for each pancake. Cook the first side for 2-3 minutes, until bubbles have started to form and pop on the surface. Flip pancakes and cook the other side for 1-2 minutes, until pancakes are golden brown and cooked through.
7. Remove pancakes from griddle and repeat process with remaining batter. You probably won’t need to add more butter if you are using a non-stick griddle, but feel free to add it for additional flavor if you want! This recipe makes 8-10 large pancakes. Serve warm with butter and syrup.
