Microwave Banana Cake
Soft and moist microwave banana cake that comes together in minutes!
Yield: 2 servings
Ingredients
- 3 Tablespoons unsalted butter
- 2 Tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 ripe banana, medium size
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/3 cup milk
- optional toppings: whipped cream, banana slices, chopped walnuts
Instructions
- Add butter to a cereal size, microwave-safe bowl. Heat in microwave just until butter melts (around 30 seconds).
- Add sugar and vanilla extract. Stir until well combined.
- Use a fork to mash the banana into the mixture until smooth.
- In a separate bowl, mix together flour, baking powder, cinnamon and salt. Then, sprinkle dry ingredients evenly over wet ingredients.*
- Add milk & mix until everything is well combined and large lumps are gone.
- Clean batter from the edges of bowl, then microwave on full power for 2 minutes (up to 2 minutes and 30 seconds), or just until toothpick inserted in middle comes out clean. Cooking time may differ based on strength of your microwave. Do not overcook.**
- Allow cake to cool a little, then add toppings and enjoy!
Notes
*Cover the wet ingredients with dry ingredients to create a barrier between the warm butter and cold milk. This helps prevent the butter from seizing and changing the texture of the cake.
**My cake took 2 minutes 15 seconds to cook in a 950 watt microwave.
