Ingredients
FAJITA SEASONING:
- 1 1/2 Tbsp chili powder
- 1 Tbsp paprika
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1 1/2 tsp sugar
- 1/2 tsp salt
- 1 Tbsp corn starch
FAJITAS:
- 1 large red onion
- 1 large green bell pepper
- 1 large (red, yellow, orange OR another green) bell pepper
- 2-3 large chicken breasts
- 2 Tbsp vegetable oil
- 1 medium lime (optional)
FOR SERVING:
- 8 (6-inch) flour tortillas
- salsa (optional)
- sour cream (optional)
Instructions
- Preheat the oven to 400 degrees. Mix all of the spices for the fajita seasoning (chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, salt, and corn starch) in a small bowl and set aside.
- Cut the onion and bell peppers into 1/4-inch wide strips. Place them in a 9×13 inch baking dish. Slice the chicken breasts into thin strips and add them to the casserole dish with the vegetables.
- Drizzle the vegetable oil over chicken and vegetables, then sprinkle the fajita seasoning mix over the top. Use your hands to toss the ingredients until everything is well coated in oil and seasoning. Bake uncovered in preheated oven for around 30 minutes, or just until chicken is cooked through, stirring halfway through cooking time. Remove from oven and squeeze the juice from half a lime over the meat and vegetables (optional).
- Serve the chicken and veggies inside a tortilla shell, topped with salsa and sour cream if desired.
