Red Velvet Cake Mix Cookies
These soft and gooey red velvet cake mix cookies are easy to make and their pretty color makes them a perfect treat for holidays or anytime!
Yield: 14 cookies
Ingredients
- 1 (13 -15 oz.) box red velvet cake mix
- 2 large eggs, room temperature
- 1/3 cup vegetable oil
- 2 Tablespoons melted butter, cooled to room temperature
- 1 cup white chocolate chips (plus a few more for the top of each cookie)
Instructions
- Preheat oven to 350F. Line cookie sheet with parchment paper.
- Add dry cake mix, eggs, vegetable oil, and melted butter to a large mixing bowl. Mix with a spoon until ingredients are well combined. The dough will be very thick and sticky.
- Stir in the white chocolate chips.
- Using a cookie scoop or two spoons, drop 2 Tablespoons of dough per cookie onto the prepared tray. Place cookies at least 2 inches apart on the tray to give them room to spread. Gently press a few additional white chocolate chips into the top of each cookie.
- Bake in preheated oven for 10-12 minutes. The edges should be set, but the center of the cookies will look slightly underdone. They will continue to set as they cool.
- Let cookies cool undisturbed on cookie sheet for at least 10 minutes before removing. Enjoy!
