Funnel Cake Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 1 teaspoon vanilla extract
  • vegetable oil for frying
  • optional toppings: powdered sugar, strawberry sauce, whipped cream, ice cream

Instructions

  • Add vegetable oil to a large, heavy pan or pot with tall sides until the oil is 2-3 inches deep. Heat on stovetop, just under medium heat, until oil reaches 350-360°F.
  • While oil heats, prepare funnel cake batter. Add flour, sugar, baking powder, and salt to a large bowl. Whisk together until well combined.
  • In a separate, smaller bowl, whisk together eggs, milk, and vanilla extract until well combined.
  • Pour wet ingredients into the bowl of dry ingredients, then whisk until smooth. You can transfer some of the batter to a funnel with the spout covered, or transfer all of the batter to a piping bag (or ziplock freezer bag) and cut off the tip to create a 1/2 inch opening.
  • With oil at the correct temperature, carefully drizzle a steady stream of batter into the hot oil. Start by making several circles to form the outside ring of the funnel cake. Then zig-zag, criss-cross, and swirl the batter over itself to fill in the middle. Fry until first side is golden brown, use tongs to carefully flip funnel cake, then fry until the other side is golden brown (around 1-2 minutes per side). Remove to a paper-towel lined cooling rack.
  • Repeat process with remaining batter, making sure oil returns to the correct temperature between batches. Recipe makes 4-5 medium/large funnel cakes. Serve warm with powdered sugar and other desired toppings.
