Strawberry Cake Mix Cookies
These easy, soft strawberry cake mix cookies are perfect for holidays or anytime you want a quick treat!
Yield: 14 cookies
Ingredients
- 1 (15.25 oz.) box strawberry cake mix
- 2 large eggs, room temperature
- 1/3 cup vegetable oil
- 2 Tablespoons melted butter, cooled to room temperature
- 1/2 - 1 cup powdered sugar
- sprinkles (optional)
Instructions
- Preheat oven to 350F. Line cookie sheet with parchment paper.
- Add dry strawberry cake mix, eggs, vegetable oil, and melted butter to a large mixing bowl. Mix by hand until well combined. The dough will be very thick and sticky.
- Scoop out 2 Tablespoons of dough per cookie. Roll the dough in powdered sugar and shape into a ball. Place cookie dough balls on a parchment lined baking tray (at least 2 inches apart). Gently press sprinkles into the tops of cookies if desired.
- Bake in preheated oven for 10-12 minutes. The edges should be set, but the center of the cookies will look slightly underdone. They will continue to firm up as they cool.
- Let cookies cool undisturbed on cookie sheet for at least 10 minutes before removing. Enjoy!
