How to Make Chocolate Chip Banana Muffins:
1) Preheat your oven to 325 degrees F.
2) Add flour, baking soda and salt to a small bowl. Whisk them together and set the bowl aside.
3) Add egg, sugar and oil (wet ingredients) to a separate, large mixing bowl. Use a spoon to stir them together until they get smooth.
4) Add the flour mixture to the wet ingredients and stir well. The mixture will be thick and crumbly, but flour should be well incorporated.
5) Mash your overripe bananas really well, making sure there are no big lumps. Then add the milk, vanilla extract, mashed bananas, milk chocolate chips, and semi-sweet chocolate chips to the batter. Use a spoon to gently fold everything together just until incorporated. Try not to overmix so that your muffins don’t turn out tough.
6) Line a 12-count muffin pan with cupcake liners and spray them lightly with nonstick cooking spray. Divide the batter evenly into the liners.
