Chocolate Chip Banana Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 2 large overripe bananas, mashed well
  • 1/2 cup milk chocolate chips
  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 325°F.
  • In a small bowl, whisk together flour, baking soda and salt. Set bowl aside.
  • Add egg, sugar and vegetable oil to a large mixing bowl and use a spoon to mix until smooth.
  • Add the flour mixture to the wet ingredients and stir well. The mixture will be thick and crumbly.
  • Add milk, vanilla extract, mashed bananas, milk chocolate chips, and semi-sweet chocolate chips. Gently fold everything together until just incorporated.
  • Line a 12-count muffin pan with cupcake liners and spray lightly with nonstick cooking spray. Divide batter evenly into liners.
  • Bake for 25 minutes, or just until a toothpick inserted in the middle comes out clean.
  • Remove from oven and let muffins cool in the pan for 5 minutes, then carefully remove to a wire rack to finish cooling. Enjoy!
