- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 Tablespoons milk
- 1/2 teaspoon vanilla extract
- 2 large overripe bananas, mashed well
- 1/2 cup milk chocolate chips
- 1/2 cup semi-sweet chocolate chips
Preheat oven to 325°F.
In a small bowl, whisk together flour, baking soda and salt. Set bowl aside.
Add egg, sugar and vegetable oil to a large mixing bowl and use a spoon to mix until smooth.
Add the flour mixture to the wet ingredients and stir well. The mixture will be thick and crumbly.
Add milk, vanilla extract, mashed bananas, milk chocolate chips, and semi-sweet chocolate chips. Gently fold everything together until just incorporated.
Line a 12-count muffin pan with cupcake liners and spray lightly with nonstick cooking spray. Divide batter evenly into liners.
Bake for 25 minutes, or just until a toothpick inserted in the middle comes out clean.
Remove from oven and let muffins cool in the pan for 5 minutes, then carefully remove to a wire rack to finish cooling. Enjoy!
