This easy kale salad tastes more like eating fruit than veggies. The apples, dried cranberries, & honey make this salad sweet and the lemon juice balances everything out with a nice tangy flavor.
So if you’re someone who doesn’t always like eating veggies (like our kids), then this salad is a great way to get some kale in your body. If you already like eating veggies, this salad will taste like a treat. Even our 3 year old and 5 year old ask for seconds!

Ingredients
Salad:
- 1 large bunch of kale; washed, stems & ribs removed, chopped/torn into small pieces
- 3 crisp, sweet apples (i use Gala); washed, cored and diced
- 1/2 cup chopped walnuts
- 3/4 cup dried cranberries
- 1 Tbsp extra virgin olive oil
- pinch of salt
Dressing:
- 1/3 cup extra virgin olive oil
- 1/2 cup lemon juice
- 6 Tbsp honey
- 3 tsp Dijon mustard
Instructions
- To a large salad bowl, add chopped kale, 1 Tbsp of olive oil, and pinch of salt. Use your hands to massage the kale until it starts to soften, 3-4 minutes.
- Add apples, walnuts, and dried cranberries.
- In a separate bowl, make dressing by whisking together 1/3 cup olive oil, lemon juice, honey, and Dijon mustard until well combined. Pour dressing over salad and toss until salad is well coated.
- Cover bowl and chill in refrigerator for at least 15 minutes before serving. Salad gets softer and more flavorful the longer it chills.
