Ingredients

Salad:

  • 1 large bunch of kale; washed, stems & ribs removed, chopped/torn into small pieces
  • 3 crisp, sweet apples (i use Gala); washed, cored and diced
  • 1/2 cup chopped walnuts
  • 3/4 cup dried cranberries
  • 1 Tbsp extra virgin olive oil
  • pinch of salt

Dressing:

  • 1/3 cup extra virgin olive oil
  • 1/2 cup lemon juice
  • 6 Tbsp honey
  • 3 tsp Dijon mustard

Instructions

  • To a large salad bowl, add chopped kale, 1 Tbsp of olive oil, and pinch of salt. Use your hands to massage the kale until it starts to soften, 3-4 minutes.
  • Add apples, walnuts, and dried cranberries.
  • In a separate bowl, make dressing by whisking together 1/3 cup olive oil, lemon juice, honey, and Dijon mustard until well combined. Pour dressing over salad and toss until salad is well coated.
  • Cover bowl and chill in refrigerator for at least 15 minutes before serving. Salad gets softer and more flavorful the longer it chills.
