Microwave Vanilla Cake
This easy, egg-free microwave vanilla cake is soft & moist and a super quick way to satisy your sweet tooth. It's slightly bigger than a mug cake, so you can share with a friend if you want to!
Yield: 2 servings
Ingredients
- 3 Tablespoons unsalted butter
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup milk
- 1 Tablespoon sprinkles (optional)
- optional toppings: whipped cream, fruit, additional sprinkles
Instructions
- Add butter to a microwave safe bowl (cereal sized). Place in microwave and heat just until butter melts (30 seconds – 1 minute).
- Add sugar and vanilla extract. Stir until well combined.
- In a separate small bowl, mix together dry ingredients (flour, baking powder and salt). Then, sprinkle dry ingredients evenly over butter mixture.*
- Add milk, then mix until everything is well combined and large lumps are gone. Fold sprinkles into batter if desired.
- Clean batter from the edges, then place bowl in the center of microwave and heat on full power for 1-2 minutes, just until toothpick comes out clean.** Do not overcook.
- Allow cake to cool a little, then top with whipped cream and fruit or additional sprinkles if desired. Enjoy!
Notes
*Sprinkling the dry ingredients across the top provides a barrier between the butter and cold milk. This helps prevent the butter from seizing, which can lead to undesireable textures in your cake.
**My cake took 2 minutes to cook in a 950 watt microwave. Start checking for doneness after 1 minute and adjust cooking time according to the strength of your microwave.
