- 3 Tablespoons unsalted butter
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/3 cup milk
- 1 Tablespoon sprinkles (optional)
- optional toppings: whipped cream, fruit, additional sprinkles
Add butter to a microwave safe bowl (cereal sized). Place in microwave and heat just until butter melts (30 seconds - 1 minute).
Add sugar and vanilla extract. Stir until well combined.
In a separate small bowl, mix together dry ingredients (flour, baking powder and salt). Then, sprinkle dry ingredients evenly over butter mixture.*
Add milk, then mix until everything is well combined and large lumps are gone. Fold sprinkles into batter if desired.
Clean batter from the edges, then place bowl in the center of microwave and heat on full power for 1-2 minutes, just until toothpick comes out clean.** Do not overcook.
Allow cake to cool a little, then top with whipped cream and fruit or additional sprinkles if desired. Enjoy!
*Sprinkling the dry ingredients across the top provides a barrier between the butter and cold milk. This helps prevent the butter from seizing, which can lead to undesireable textures in your cake.
**My cake took 2 minutes to cook in a 950 watt microwave. Start checking for doneness after 1 minute and adjust cooking time according to the strength of your microwave.
