Ingredients

  • 3 Tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/3 cup milk
  • 1 Tablespoon sprinkles (optional)
  • optional toppings: whipped cream, fruit, additional sprinkles

Instructions

  • Add butter to a microwave safe bowl (cereal sized). Place in microwave and heat just until butter melts (30 seconds - 1 minute).
  • Add sugar and vanilla extract. Stir until well combined.
  • In a separate small bowl, mix together dry ingredients (flour, baking powder and salt). Then, sprinkle dry ingredients evenly over butter mixture.*
  • Add milk, then mix until everything is well combined and large lumps are gone. Fold sprinkles into batter if desired.
  • Clean batter from the edges, then place bowl in the center of microwave and heat on full power for 1-2 minutes, just until toothpick comes out clean.** Do not overcook.
  • Allow cake to cool a little, then top with whipped cream and fruit or additional sprinkles if desired. Enjoy!

Notes

*Sprinkling the dry ingredients across the top provides a barrier between the butter and cold milk. This helps prevent the butter from seizing, which can lead to undesireable textures in your cake.
**My cake took 2 minutes to cook in a 950 watt microwave. Start checking for doneness after 1 minute and adjust cooking time according to the strength of your microwave.
