We are always looking for quick, satisfying meals to make for dinner on weeknights and this stuffed pepper works perfectly. It has the ingredients of a stuffed pepper but tastes kind of like chili. It’s the best of both worlds! I like using ground turkey in this recipe, but you can use ground beef if you prefer. Stuffed pepper soup tastes great served over rice with some crushed saltines or soup crackers on top.

Ingredients for Stuffed Pepper Soup:
- Ground Turkey (or ground beef if you prefer)
- Onion
- Green Peppers
- Garlic
- Tomato Sauce
- Beef Bouillon
- Water
- Diced Tomatoes (regular and fire-roasted)
- Brown Sugar
- Italian Seasoning
- Garlic Powder
- Salt
- Pepper
- Rice
How to make Stuffed Pepper Soup:
1) Add ground turkey (or ground beef) and diced onions to a large pot and brown over medium heat until meat is cooked through and onions are softened. If you are using ground beef, drain the fat after browning then return to heat. (If you are using turkey, add a teaspoon of olive oil to the pot first to prevent sticking)
2) Add minced garlic to pot and cook for one minute, stirring constantly.
3) Add chopped bell peppers, tomato sauce, regular diced tomatoes, fire roasted diced tomatoes, water, beef bouillon cubes, brown sugar, Italian seasoning, garlic powder, salt, and pepper. Stir to combine.
4) Bring to a boil over high heat while stirring, then reduce heat to medium-low and simmer uncovered for 25 minutes, stirring occasionally.
5) While soup simmers, prepare rice in a separate pot according to package directions. I make four to six servings of rice.
6) Serve stuffed pepper soup over rice and top with soup crackers (optional). Enjoy!

Ingredients
- 1 pound ground turkey OR ground beef
- 1 medium onion, diced
- 1 1/2 teaspoons minced garlic
- 2 green bell peppers, chopped
- 2 (15 ounce) cans tomato sauce
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 (14.5 ounce) can fire roasted diced tomatoes, undrained
- 2 cups water
- 2 beef bouillon cubes (the 1/2-inch cube)
- 3 Tablespoons brown sugar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 - 6 servings of rice, cooked separately

Instructions
