Stuffed Pepper Soup

- 1 pound ground turkey OR ground beef
- 1 medium onion, diced
- 1 1/2 teaspoons minced garlic
- 2 green bell peppers, chopped
- 2 (15 ounce) cans tomato sauce
- 1 (14.5 ounce) can diced tomatoes, drained
- 1 (14.5 ounce) can fire roasted diced tomatoes, undrained
- 2 cups water
- 2 beef bouillon cubes (the 1/2-inch cube)
- 3 Tablespoons brown sugar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 - 6 servings of rice, cooked separately

Add ground turkey (or ground beef) and diced onions to a large pot. If you use ground turkey, add 1 teaspoon of olive oil to the pot first to help prevent sticking. Brown over medium heat until meat is cooked through and onions are softened. If you use ground beef, drain the fat after browning then return pot to heat.
Add minced garlic to the pot and cook for one minute, stirring constantly.
Add chopped bell peppers, tomato sauce, regular diced tomatoes, fire roasted diced tomatoes, water, beef bouillon cubes, brown sugar, Italian seasoning, garlic powder, salt, and pepper. Stir to combine.
Bring to a boil over high heat while stirring, then reduce heat to medium-low and simmer uncovered for 25 minutes, stirring occasionally.
While soup simmers, prepare rice in a separate pot according to package directions (I make four to six servings of rice).
Serve stuffed pepper soup over rice and top with soup crackers (optional). Enjoy!
