Cake Batter:
- 1/4 cup unsalted butter, melted
- 1 (15.25 oz) box yellow cake mix
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup milk
Cinnamon Swirl:
- 1 cup light brown sugar, packed
- 1 Tablespoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Glaze:
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Preheat oven to 350°F.
Make cake batter: Add butter to a large, microwave safe mixing bowl and microwave until melted. Sprinkle the dry cake mix over the top, making sure to fully cover the butter (this creates a barrier between the cold ingredients so that the butter doesn't seize).
Add vegetable oil, eggs, sour cream, vanilla extract, and milk. Whisk until well combined.
Make cinnamon swirl: In a separate bowl, mix together brown sugar, cinnamon, and nutmeg until well combined.
Spray 9x13 inch baking dish with non-stick spray. Spread half the cake batter evenly in the bottom of the dish.
Sprinkle the cinnamon sugar mixture evenly over the cake batter. Top with remaining cake batter and carefully spread it over the sugar. Use a knife to create a few swirls through the batter.
Bake in preheated oven for 30-35 minutes, or just until cake is golden brown and toothpick inserted in the middle comes out clean.
Make glaze: In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Pour over the warm cake, spread it out evenly, and let it set for at least 20 minutes before cutting. Enjoy!
