No Milk No Egg Birthday Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 Tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dairy-free butter/margarine, melted
  • 2 1/2 cups water
  • 1 teaspoon vanilla extract
  • 1/2 cup rainbow sprinkles
  • extra dairy-free butter or vegetable oil for cooking
  • optional toppings: dairy-free butter, syrup, dairy-free whipped topping, sprinkles

Instructions

  • Preheat griddle to 350°F. If you prefer cooking on a pan, don't heat the pan until after your batter is prepared.
  • Add all-purpose flour, sugar, baking powder, and salt to a large mixing bowl. Whisk until well combined.
  • Add melted dairy-free butter/margarine, water, and vanilla extract to the flour mixture. Whisk gently until the dry ingredients are moistened and large lumps are gone. Try not to overmix, the batter will still have small lumps.
  • Gently stir in rainbow sprinkles.
  • Let batter sit undisturbed for 5 minutes before putting on griddle.
  • Melt a little dairy-free butter on the hot griddle and use a spatula or paper towel to spread it evenly across the surface. Or, heat the dairy-free butter in a large pan over medium-high heat. Once butter has melted, spread it evenly around pan then reduce heat to just below medium before adding batter.
  • Scoop 1/4 cup of batter onto griddle or pan for each pancake. Cook until bubbles form on the tops of pancakes and the bottoms are lightly browned, around 2-3 minutes. Note: These pancakes are a little lighter in color than the average pancake.
  • Flip pancakes and cook another 1-2 minutes, until both sides are browned and pancakes are cooked through. Remove from griddle and place on a plate.
  • Repeat process with remaining batter (only butter the griddle again if necessary). Recipe makes around 18 pancakes. Serve pancakes warm with dairy-free butter and syrup.
