These soft and chewy lemon sugar cookies are delicious and easy to make!

Ingredients
1 1/2cupsall-purpose flour, spooned and leveled
1teaspooncornstarch
1/2teaspoonbaking powder
1/4teaspoonbaking soda
1/4teaspoonsalt
1/2cup(1 stick) unsalted butter, softened
1cupgranulated sugar
1large egg, room temperature
1/2teaspoonvanilla extract
2Tablespoons fresh lemon juice
1 1/2teaspoonslemon zest
5-6dropsliquid yellow food coloring (optional)
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a medium mixing bowl, whisk together flour, cornstarch, baking powder, baking soda and salt. Set dry ingredients aside.
Using a handmixer or standmixer with paddle attachment, cream butter and sugar together in a large mixing bowl. Start on low speed and gradually increase to medium speed. Cream for 3 minutes on medium speed, then use a rubber spatula to scrape down sides of bowl.
Add egg, vanilla extract, lemon juice, lemon zest, and yellow food coloring (optional). Mix on medium speed until just combined, around 30 seconds.
Add the dry ingredients to the wet ingredients and mix on low speed for 30 seconds. Stop and scrape down any flour from the sides of the bowl, then mix for an additional 15-30 seconds, just until ingredients come together. Don't overmix.
Use a cookie scoop or two spoons to scoop out 2 Tablespoons of dough for each cookie. Place onto prepared baking sheet at least 2 inches apart. The dough will be very sticky.
Bake for 10-14 minutes, until edges of cookies have just slightly browned. Let cookies cool on the baking sheet for at least 5 minutes before removing, then enjoy! Recipe makes around 14 cookies.
