1/4cupvegetable oil (plus a little extra for the griddle)
1 1/2cupsmilk
1/2cupwater
2large eggs, beaten
4drops red food coloring (optional)

Instructions
Preheat griddle to 350°F.
Add dry strawberry cake mix and all-purpose flour to a large mixing bowl. Use a whisk to combine.
Add vegetable oil, milk, water, beaten eggs, and food coloring to the mixing bowl. Use a spoon to mix until dry ingredients and wet ingredients are just incorporated. Try not to overmix; there will still be small lumps in the batter, but there should be no patches of dry ingredients.
Use a spatula or paper towel to spread a little vegetable oil over the surface of the griddle.
Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the tops of pancakes and the bottoms are golden, around 2 minutes.
Flip pancakes and cook another 1 minute, just until pancakes are cooked through. Remove from griddle and place on a plate.
Repeat with remaining batter. Recipe makes 18-20 pancakes.
Serve pancakes warm, topped with strawberry sauce and whipped cream (optional). Enjoy!
